Traditional salt production process in Kampot

What makes Kampot salt different is the manual production process that has been preserved for many generations. Unlike salt produced using modern industrial technology, salt in Kampot is created by evaporating sea water using sunlight, a technique that requires meticulousness, patience and strenuous manual labor.

1. Harvesting seawater

A salt farmer’s working day starts very early, even before sunrise. They go to the sea with traditional tools such as buckets and baskets to collect sea water. Every drop of water is transported manually to “salt pans” – shallow lakes carefully dug and banked on flat land.

2. Evaporation by sunlight

After seawater is piped into the pans, the evaporation process will begin under the influence of intense sunlight. This is an important step in salt crystallization. Depending on weather conditions, this process can take from 2 to 5 days.

3. Harvesting salt

When the water evaporates, a layer of salt crystals will accumulate on the surface and bottom of the pan. At this time, farmers will use manual tools to collect salt and pile it into small piles to dry completely before packaging. This entire process does not use machines or chemicals, ensuring the naturalness and purity of the final product.

Why is Kampot salt special?

Kampot salt is not only famous domestically but also highly appreciated by international chefs and culinary experts. This is largely due to the natural quality and mild, rich taste of the salt. Some reasons why Kampot salt is considered a precious specialty:

  • Manufactured entirely by hand, without chemicals
  • Rich in natural minerals that are beneficial for health
  • Characteristic salty taste, ideal for many dishes
  • Associated with clean, unpolluted raw material areas

In addition to culinary uses, Kampot salt is also used in the pharmaceutical industry, cosmetics and the production of natural health care products.
